My husband introduced me to this basic classic savoury snack and brilliant breakfast decades ago, and I can tell you I fell in love with it instantly because it’s just… Mmm!

Why This Recipe Works

Trendy

Cucumbers are currently all the craze, which definitely inspired a little spin on my recipe cards. I came up with this new creative idea, and my family fell in love instantly. It’s gluten-free, oil-free, and plant-based.

Quick

I don’t think I’ve made a recipe that’s quicker than this one. Sure, I have smoothie recipes that take only 5 minutes—but a filling snack? Nope, I haven’t made it THIS fast.

Delicious

The balance of umami from the yeast extract and peanut butter, and the crunch from the cucumbers… it makes for an incredibly delicious toast every single time!

Protein-Rich

A delicious snack that also contributes to half of your daily protein requirement? Absolutely deserves a nod! This plant-based peanut butter cucumber toast offers about 13 g of protein per serving. So if you eat two of these low-calorie toasts, you get 26 g of protein in one go!

Recipe Ingredient Notes

Wholemeal seeded bread. The base of the recipe. I like to use wholemeal seeded bread for extra fibre and crunch. If you’re looking for a gluten-free option, you can go for grain-free seeded bread. It offers a similar nutty flavour, just without gluten.

Peanut butter. I used smooth peanut butter instead of chunky. The cucumbers provide a good amount of crunch, but any kind of seed or nut butter would work. If you’ve got allergies, you can look for an alternative. Do note, this will alter the original recipe flavours. For the closest nutty alternative, I would use sesame paste (it’s different from tahini because the sesame seeds are toasted before blending).

Yeast extract. An intensely salty flavour with a hint of umami. It’s also a great source of Vitamin B12. You can use Marmite or Vegemite or any other brand. Be sure to use it sparingly, though—it can be overpowering if you haven’t tried it before.

Cucumber (sliced thinly). Both English and Persian cucumbers work. But if you have fresh garden cucumbers, that would be amazing! You don’t need to peel the cucumbers. In fact, I think the dish tastes better with the peels intact. The cucumber skin holds extra water, so the toast doesn’t get too soggy. Bonus points for the extra fibre and nutrition here.

Fresh sprouted beans. Mainly for some extra nutrition, but also for a slightly earthy hint.

How to Make Vegan Peanut Butter Toast with Cucumber

It’s gonna take a total of 5 minutes. 3 minutes of prep time and 2 minutes of cook time.

Toast your bread, until golden or slightly crispy. Toasted bread will keep the base crunchy—it’s a small but super important step.

Add the toppings. Evenly spread yeast extract and peanut butter over the toast. Top with chopped cucumbers, and sprinkle with sprouting beans.

There you go. Your plant-based peanut butter toast is ready. It’s such a simple-to-make, savoury, fresh, and crunchy delight for the taste buds 🥒😋

  • Sourdough instead of wholemeal seeded bread.

  • Rice cakes or Ryvita instead of bread

  • Sunflower seed butter instead of peanut butter.

  • Miso paste instead of yeast extract.

  • Lettuce instead of cucumber.

  • Avocado instead of cucumber.

  • Tomatoes instead of cucumber.

  • Cabbage instead of fresh sprouted beans.

Pro Tips to Make This Recipe

  • Toast the bread for a bit longer if you want a crunchier base.

  • Peeled or unpeeled, chop the cucumbers into thin, small slices. I recommend up to ¼ inch thickness max.

  • Use room-temperature yeast extract and peanut butter. We don’t want to tear the bread when spreading the toppings.

  • I always pat the cucumbers dry. This helps prevent a soggy toast.

  • If you've run out of cucumber you can use lettuce leaves instead.

  • For much lower calorie and low-fat option, swap peanut butter for peanut powder mixed with a little water.

  • Because the recipe has only four ingredients, everything will be on display. Make sure to use fresh bean sprouts; older ones can get mushy, and you won’t get the same crunch. Also, sprinkle the beans right before serving to maintain their freshness.

  • The toast is best enjoyed when served right away—the combo of warm toast paired with cold cucumbers is unbeatable!

  • You can add a drizzle of maple syrup to bring out the flavours fully.

PB toast topped with cucumber goes with so many sides. My number one favourite idea is to create a sandwich. Follow the same recipe, just add another piece of toast on top, and enjoy it as a classic pair of sandwich and fries. For a lighter idea, I like to make a quick pair with hummus or tzatziki or a creamy edamame dip (you can enjoy it with any of your favourite sauces).

Cucumber toast with peanut butter is great for meal prep. You can store it in a plastic wrap or an airtight container for up to 3 days. I like to keep the cucumbers and bean sprouts separate until ready to eat.

Several nut butters, like almond and cashew butter, taste great. Seed butters, like pumpkin seed butter, and even cookie butter, work for this recipe.
