Ingredients for the Plant-Based Tofu Scramble Seasoning

Black salt (Kala namak). Look for finely-grained black salt (usually found at ethnic grocery stores) and sieve it before using it to avoid any clumps. You can also use regular table salt, but the eggy flavour won’t be present. 

Nutritional yeast. I mostly use fortified nutritional yeast for the most significant B12 content. You can find it easily in the baking aisle of most grocery stores.

White pepper. This ingredient adds subtle heat to the seasoning. Bonus points if you use freshly ground whole white peppercorns. 

Turmeric. Packaged ground turmeric at grocery stores works just fine. You can also use whole turmeric root, but it requires grinding or grating.

How to Make Tofu Scramble Seasoning 

Sieve the Black Salt. Use a fine-mesh sieve to remove any lumps from the black salt to ensure a smooth consistency in your seasoning.

Combine the Dry Ingredients. In a bowl, whisk together the sieved black salt, nutritional yeast, white pepper, and turmeric.

Adjust Texture (Optional). If you prefer a finer seasoning, transfer the mixture to a spice grinder or blender and grind until it reaches your desired consistency. This step is optional, and the seasoning works well even with a slightly coarse texture.

Store and Enjoy. Transfer the finished Cheeky Vegg seasoning to an airtight container and store it in a cool, dark place for up to 6 months. Enjoy it sprinkled on vegetables, salads, popcorn, tofu scrambles, pasta dishes, and more!

I double, treble and even quadruple these measurements when I batch mix this, as I do with most seasoning recipes. This saves so much time and encourages the enjoyment of a variety of tasty dishes.

Pro Tips For This Recipe

  • Black salt can be found in most Asian grocery stores or bought online. 

  • I recommend scaling this recipe up and keeping a container on the go, at all times. This is my number one go-to seasoning. I really love it in so many dishes. It's a real game-changer.

  • To intensify the flavours, try dry-roasting the white pepper and turmeric in a skillet over medium heat for a few minutes until fragrant. 

  • Store your Cheeky Vegg seasoning in an airtight container away from direct sunlight to preserve its flavour and colour for up to 6 months.

  • If the seasoning starts to lose its vibrancy, consider adding a small amount of freshly ground white pepper and turmeric to revive the flavours.

  • When using this seasoning mix to prepare scrambled tofu, I use approximately 1 heaped tbsp per 7 ounces (200 g) of medium-firm tofu, which I get from my local Chinese supermarket. Medium-firm works best. If this is hard to find, try mixing firm tofu with silken tofu, e.g. 3 1/2 ounces (100 g) firm tofu mixed with 3 1/2 ounces (100 g) silken tofu to make 7 ounces (200 g) medium-firm tofu—a great consistency for scrambling!
